Le Trifole  owned by Davide Curzietti was founded as a result of a passion for this noble tuber, the truffle. First the passion belonged to our fathers, who were “trifolai” (truffle hunters), now this passion is ours as truffle traders. It would be inconceivable for us to work with this most fragrant of tubers without respecting its value.

This is our vision, and it is what we would like to transmit through our system of selling both selected fresh truffles and truffle products, which we prepare and package on our premises. Since we are so enthusiastic about our work, we will be more than happy to welcome anyone who wishes to discover this delicious truffle “world”.

Truffles are a sort of mushroom that lives below ground. They form a symbiotic relationship with their environment and feed on the substances they find on the roots of some species of trees to which they also restore vital substances.
Since they live in symbiosis with trees, the most important species for truffles are walnut, poplar, hazel, linden, chestnut, pine, oak (turkey oak, durmast oak, little oak, English oak, Adriatic oak, and Holm oak).

Il corpo fruttifero del tartufo si presenta , come un corpo sferoidale, di dimensioni variabili dalla grandezza di una nocciola a quella di un melone, e di conformazione più o meno regolare.
La parte esterna del tartufo (Peridio), più semplicemente buccia o scorza, a seconda della specie assume il colore bianco, giallo. grigio scuro o nero, liscio o verrucoso.
Il peridio ha una funzione protettiva contro batteri e muffe.
La caratteristica principale di questo fungo è il suo profumo, percettibile anche da lontano.
Si differenzia da specie a specie di tartufo, ma in ogni caso si tratta di un aroma particolare difficile da descrivere, perchè non è paragonabile a quello di nessun altro fungo o frutto commestibile.
Da qui la sua rarità e unicità.
All’interno del frutto, la polpa o gleba si presenta di colore diverso a seconda della specie e a secondo dell’albero con cui vive in simbiosi e dei sali minerali contenuti nel terreno.
Per esempio, La gleba del tartufo bianco pregiato ( Tuber Magnatum Pico), è quasi bianca se questo vive con salice o il pioppo, è di color nocciola scuro se vive con la quercia, ed è maculata di rosso se vive in simbiosi con il tiglio.
To this range of colours we can add the singular, unique shade of the black winter truffle (Tuber Melanosporum Vitt.), which has a gleba that, when fully ripe, becomes a blackish shade of purple.
The main characteristics for distinguishing the different species are:
The soil, the plants with which the truffle has a symbiotic relationship, and the area or countries in which the truffles grow.
However, the main difference is that between the black and white truffle.
The black winter truffle is found in France (Perigord, Vaucluse) and in Norcia, Umbria.
That is why the truffle is known as the Norcia or Perigord black truffle
The best truffle of all is the white truffle, followed by the black winter truffle.
The best white truffle is found in Alba, Piedmont or in the Monferrato region and in the Marches region in Acqualagna.
