We would like to present the range of
truffle-based products from "Le Trifole", some of which are
traditional, while others are more innovative and inspired by a
desire to experiment.

A few words about
the preparation...
The fresh truffles
arrive at our premises where they are carefully selected and divided.
After washing in a special truffle washer, the truffles are then
checked again and any imperfect parts are removed.
At this point, according to the product being prepared, the truffles
are ground in a truffle chopper to form a paste or cut into slices.
Then, oil and salt are added and the product is placed in jars.
After they have been hermetically sealed, the jars are placed inside
an autoclave and sterilised at a temperature of 121°C to destroy any
form of bacteria.
When this process is finished, the jars are dried and labelled.
Finally, the jars are packaged and stored in our warehouse.
With a view to persistent increases in quality, we have developed a
company system of self-checking, which has been set down in a manual.
Thanks to this approach, the entire production process has been
analysed following the HACCP method to guarantee the quality of the
product in terms of hygiene.
Although we use specific high-tech equipment to guarantee the
quality of our products, we can guarantee that the basic product
itself always has that homemade touch and above all, it is
characterised by the use of seasonal raw materials that are
carefully selected and washed.
Preservation methods...
It is important to stress that our products are prepared without the
use of any preservatives to prevent the original taste and flavour
of our truffles from being altered in any way.
This taste is so fine and delicate that its entire flavour deserves
to be savoured to the full. This is why the product should be stored
in the refrigerator, well covered with its oil and preferably eaten
within seven days.
Fresh truffles on the other hand should be wrapped in kitchen paper
and placed in a glass jar, closed, and then stored in the bottom
part of the fridge. It is also important to change the kitchen paper
every 2 days to maintain the flavour intact.
The products are very simple to use: they can be used as a condiment
for any type of white pasta, to flavour meat or eggs, or to prepare
delicious snacks that will satisfy even the most refined taste buds |
